Did you know there was such thing as Pork Rib Chops? I didn't! There is so much that I just didn't know about, and I love learning more and more each week. This week I decided to do a harissa garlic rub on the rib cops and paired it with a lemon balm, mango, kiwi salsa.
I always need a salad. This week I made a shaved asparagus lemon salad with parmesan. The asparagus I got from one of my other favourite farms here, SpringRain Farm. For some reason, that still didn't seem like enough food, so I decided to make garlic bread with the White Lotus Sourdough! I'm glad I did because it just tasted so good!
One thing that I've been enjoying is learning about things I didn't know about, like lemon balm. I loved living in Colorado, but there was so much that I just wasn't exposed to. I'm not a huge fan and will probably try growing some myself!
The flowers this week are also beyond stunning! I don't really know what they all are, but the iris's are starting to open and they are extremely eye catching!
Harissa Garlic Rubbed Pork Rib Chops
INGREDIENTS
1lb Pork Rib Chops
3T Harissa
1T Granulated Garlic
Pinch of salt and pepper.
Blend the harissa, garlic, salt and pepper together and rub on both sides of the rib chops.
Heat a cast iron skillet, or a grill on high heat. Sear both sides before turning to a medium-high heat and cook 3-5 minutes on each side depending on the level of doneness you like!
Asparagus Mint Lemon Salad with Parmesan Shavings.
INGREDIENTS
1lb Asparagus, shaved.
1t Lemon Zest
2T Chopped Fresh Mint.
1T Fresh Lemon Juice
3T Shaved Parmesan
2T Olive Oil
Pinch of Red Pepper Flakes
Using a peeler, peel the asparagus into shaved pieces. It can be a little messy, don't worry! Make sure to keep the tops and toss them in to the salad.
Mix the asparagus and mint together.
To make the dressing combine the lemon zest, lemon juice, olive oil and red pepper flakes. I like to use a mason jar and shake the crap out of it! Add the dressing to the asparagus and mix.
Sprinkle the parmesan on top!
Mango, Kiwi, Lemon Balm Salsa
I LOVE LOVE LOVE gold kiwis, but you could use any kind of kiwi for this!
INGREDIENTS
1 Yellow Mango, diced
2 Gold Kiwis, diced
2T Chopped fresh Lemon Balm
1 Fresno Diced
1/2 Red Onion Diced
1T Fresh Lemon juice
Salt to taste
Combine everything together and use salt to taste.
