The challenge started without me knowing it was a challenge! Going to the market on May 1st and collecting the first CSA was beyond exciting! I wasn't entirely sure what to expect, but I was extremely pleased with everything we got! Pork chops, lettuce mixes, mint, rhubarb, honey (wow!), the bread, our flowers and more!
Now, I've never made anything with rhubarb before, so it took so researching and asking my friends what they did with rhubarb. Eventually, I sat back thinking... What if I made a mint rhubarb chutney to go with breaded pork chops? That could be good, right?
Maybe pair it with a mixed green salad with some blueberries and a honey vinaigrette? Sure! Let's try it!
It turned out pretty darn good! The flowers this week were also fantastic! It reminded me how much I genuinely love having fresh flowers in the house. I'm not a pro at arranging flowers, but with practice each week, I suspect I'll start to get better at it!
Rhubarb Mint Serrano Chutney
INGREDENTS:
1/3 Cup Lemon Juice - Ideally fresh
2T Fresh Mint
3 Cups Rhubarb - Chopped
1t Lemon Zest
1T Butter
1/3 Cup Sugar
2 Serranos - Minced
1 small Onion - Minced
Melt butter in large skillet over medium heat; cook onion and serranos until very fragrant. Add rhubarb, sugar, lemon juice, mint and lemon zest. Bring to boil, stirring to dissolve sugar. Reduce heat and simmer, uncovered, for 5 to 7 minutes or until thickened. Season to taste with salt and pepper.

Air Fryer Pork
This is just what I did because of how the meat came and I was serving three people!
INGREDENTS:
Two Pork Chops (1lb) - trim meat into medallions
1 Cup Flour
1 Egg
1 Cup Panko
Pre-heat air fryer to 425F.
Dredge your medallions in flour, dip in the egg and coat in panko.
Spray air fryer basket with oil. Arrange medallions and spray the top. Cook for 4 minutes.
Flip medallions and spray again. Cook for 4 minutes or until done.
Blueberry Mixed Green Salad w/ Honey Vinaigrette
This could work with pretty much any kind of lettuce! The better the quality of honey the better! I tend to like very lightly dressed salads.
INGREDENTS:
2 Cups of Mixed Green lettuce from Space Twins!
2/3 Cup Blueberry
2T Olive Oil
2t Honey
1t lemon - or a vinegar of your choice.
Toss your lettuce and blueberries together. Mix the oil, honey and lemon well and toss your salad with it!
